How does the scaling work? The accessories are not the same percentage as the goose. If i make both at 70% will they fit? 

The best way is to use a full size goose's Z height and scale it down with the accessories to match the Z height of the 75% goose. % isn't always as accurate because it resets 100% in the slicer with some actions.

How tall is the goose after printed and put on the shoes or the feet?

At the size we uploaded it about 13in/33cm. It is scalable is you have a larger printer, or want to go smaller.
