what about the long one in the middle is it necessary, could I just glue it and if it is necessary which dowel could work with it
For the long one in the middle you should put in a 1m long (445mm long for the decayed version) and 6mm thick steel rod for better stability. If you're just going to hang the sword on the wall you don't need it.
ok so which dowels would be used for each part by chance
There are two holes in every blade element to put in a Ø6x20mm dowel (Ø4x20mm for decayed blade) and in the handle to put in Ø6x15mm dowel.
There are two holes in every scabbard element to put in a Ø4x20mm dowel (except for the tip: Ø4x15mm).
